Chef Philo Varghese:-

Chef Philo Varghese started his Journey in 2001 with Cgh earth group Cochin, after completing his studies from Vani School of Hotel Management. Over the years Chef Philo Varghese has the opportunity to show his skills in many hotels, (Casino Hotel Cochin, Bangaram island resort, Lakshadweep, The Indian ForumAyurvedic resort, Germany. Chef Philo Varghese loves food and his favorite cuisine is Italian. He is very passionate and dedicates at his work.

 

 

What inspired you to become a chef?

I love food, my childhood I was always helping my mom in the kitchen, when I was the age of 17 one of our family members ask to me to do a hotel management course because, he saw that I am making food in the kitchen, from where I started my journey in this beautiful industry.

 

 

What is the one cuisine that you are most comfortable cooking? Enjoy the most?

I love Italian cuisine, (especially all verities of pasta)

 

 

Is there a chef you admire the most? Who and why?

Yes..!!! I admire Chef StephaneBrallet, he is a former executive chef (four seasons), the reason is he was my mentor, inspired me a lot.  He is very passionate and dedicates at his work.

 

 

When are you happiest at work?

I will be very much happy when my customer praise about my food, and when there are a good smile in my team (staffs) faces.

 

 

Do you have any advice for someone wanting to become a chef??

I just want to say It’s not easy to become a chef; you need to work hard, keep a positive attitude, patience, and commitment to work. Cooking is an art where you perform for others satisfaction.

 

 

Which is your favorite home cooked food?

My favorite home-cooked food is Kappa (tapioca), fish curry and Beef pepper fry.

Chef Philo Varghese started his Journey in 2001 with Cgh earth group Cochin, after completing his studies from Vani School of Hotel Management. Over the years he has the opportunity to show his skills in many hotels, (Casino Hotel Cochin, Bangaram island resort, Lakshadweep, The Indian ForumAyurvedic resort, Germany. In 2007 he Joined in Four Seasons Mumbai as a part of pre-opening team, from there He went to Maldives & Morocco. Later He joined St RegisVommuli Resort Maldies as sous chef. Since 2 years Chef Philo Varghese working as an Executive Chef at The Zuri Kumarakom Kerala Resort & Spa, at Kerala. His Specialty is of Italian and Japanese cuisine.9
