Suresh Chef Pillai is an executive chef at The Raviz, Kollam, and has participated in BBC Masterchef & was the Guest chef of University in the Bahamas, also interviewed by The Hindu, New Indian Express.The journey started when Chef Pillai by suresh is started a job as a waiter in a small restaurant in his village.Later, he entered the kitchen and started helping the chef.
What inspired you to become a chef?
When I was young, I had never thought of becoming a chef.One day I started working as a waiter in a small restaurant in my hometown in 1994.Slowly I moved to the kitchen helping the chef in cooking.Later I worked as a cook and I realized that this is what I am interested in doing.Eventually,I became a chef after 25years of experience.
What is the one cuisine that you are most comfortable cooking? Enjoy the most?
My favorite cuisine is the Kerala Cuisine itself,not because I am born here, it is because of the variety of Vegetables,Meat,Seafood available here.Breakfast is the cuisine that I enjoy the most.
Is there a chef you admire the most? Who and why?
Chefs that I am inspired with is Vineet Bhatia,he has changed the Indian Cuisine Globally.I admire chefs like Gangan Anand,Gordon Ramsay & Jamie Oliver.
When are you happiest at work?
I am always happy at work with my colleagues.And the most happiest time is when I am cooking and my guests are happy enjoying the food.The smile they have on their face is the happiest thing I crave for.
Do you have any advice for someone wanting to become a chef?
If you wish to become a chef,you must inherit passion,dedication & confidence.Making a guest happy & satisfied is not that easy,so Try to focus and work hard everyday.
The most inspired and Respectful Person in the hospitality industry?
The person whom I Respect and Inspired of is Mr Karam Sethi of JKS Restaurants.He has changed Indian Restaurants in London with Gymkhana, Trishna, Hoppers, Brigadiers, Bao, Lyles, Kitchen Table & Sabor.Another person is Ms.Kamelia Punjabi of the masala world group,she is the most inspirational person who gave me an opportunity to work in Veeraswamy, Amaya, Chutney Mary, Mazala zone.She is the Pioneer of Indian of Cuisine.And Of course,Dr.B Ravi Pillai the Chairman RP group Raviz hotels and resorts
